I don’t know about you, but lately, our dinners have been very boring. We’ve been stuck in a rut, eating the same dishes every week because they are quick and easy, and now we have burned ourselves out on all of our quick and easy recipes. I cleaned my refrigerator out the other day and threw away so much food it was shameful; no one wanted to eat the leftovers. I guess the rut wasn’t soo bad because it did inspire my previous post Rice Roundup: 29 Delicious Rice Recipes to Jazz up Dinnertime. So, back to the internet I went, in search of new recipes.
This time I focused on spaghetti recipes for this post because:
1. There are so many out there (I had to reign it in and stop at 30, otherwise, this post would have been far too long!)
2. Spaghetti, fettucini, linguini, and angel hair pasta are a frugal alternative to casseroles.
3. They are quick and easy to prepare.
4. They are filling.
5. My family likes them.
I had a supervisor that was Italian, born and raised in Italy. I asked her which packaged pasta she bought and she said Barilla. That was 15 years ago, though. Kitchn just came out with a post on The Everyday Pasta Brand Italians Buy (and You should Too) and De Cecco seems to be another popular choice in Italy.
I’m not a “pasta purist”. I don’t have any qualms about substituting spaghetti in the place of fettuccini, or even elbow macaroni for spaghetti noodles if that’s all I have. I tend to use what I have on hand and try to make it work. I encourage you to have an open mind and think outside the box, experiment a little, make it interesting!
Easy Spaghetti Dinner Recipes

QUICK PASTA WITH DRIED TOMATOES, SPINACH, AND WALNUTS
1 lb spaghetti
2 tablespoons butter
1 red onion
1 tablespoon of flour
2 cloves of garlic
1/3 cup of walnuts
1/2 lb of spinach
3.5 oz of dried tomatoes
2 1/8 cup of milk
1/3 cup of Parmesan
Salt pepper
1 tablespoon of olive oil
Boil water and prepare spaghetti according to the package instructions.
Peel onions and cut them into fine pieces. Heat butter in a large saucepan. Sweat the onion for 3-5 minutes. Add the flour, stir and cook for about 2-3 minutes. Gradually add milk, stirring constantly. Season with salt and pepper.
Chop walnuts and tomatoes roughly. Peel the garlic and crush with the broad side of the knife. Rub parmesan.
Heat olive oil in a pan. Add garlic and sauté for about 2-3 minutes. Add spinach and let it collapse. Add dried tomatoes to it.
Mix pasta with sauce, Parmesan cheese, and spinach mix. Serve immediately and sprinkle with walnuts.

PASTA WITH PAPRIKA SAUCE
Ingredients for 2 persons
2 big red peppers
2 shallots
4 cloves of garlic
1/2 lb spaghetti or linguine
2 tsp cornstarch
1 teaspoon paprika powder
3 tablespoons of finest olive oil
1 cup (200 ml) of cream
3 stems of fresh smooth parsley
Salt, pepper (freshly ground)
For a vegan version simply replace the cream with almond milk.
Preheat the oven to 475°F. Roast the peppers for 30 minutes, then remove. The skin of the pepper may turn black in the oven, do not be scared! The shriveled skin of the pepper can now be easily removed and disposed of. Dispose of stem and seeds also.
Peel and finely chop the shallots and garlic. Fry in a pan in olive oil. Season with salt and pepper.
Cook the pasta at the same time as instructions.
Then put the contents of the pan in the blender. Add paprika, cream, paprika, and cornstarch. Process in the blender to a creamy mass. Season and if necessary season with salt, pepper and paprika powder (the sauce may be intense in the taste, as the pasta absorbs the taste).
Simmer the sauce in the pan. Due to the cornstarch, the sauce thickens nicely. Then add the pasta and mix everything well. Garnish with fresh chopped parsley.

Soo many delicious spaghetti recipes! We tried the Taco spaghetti last week and my kids liked it, but they loved the Million Dollar Spaghetti.
